Would it be worth to get a new processor for this?

Why are you considering this? Because your Mini is sluggish or ...?

I think it'd be worthwhile for the project aspect and/or your current processor is dead/dying but if just for upgrading I'm not sure it's worthwhile since it's an older Mini and the hardware is older. You'd probably be better off finding a newer used Mini or something.

That being said, I've taken my Minis (2008 and 2009 model) apart to upgrade them (HD/RAM) and they're pretty easy to work on. I found the antennas to be the biggest pain.

If the mac mini is from 2006, then it is possible to upgrade the processor, as it has a zif socket. however, I don't think it would be worth it and you'd spend way too much money and effort and not see an huge performance increase. If your mac mini is from after 2006, then it's not even possible to upgarde it.

You would be better off waiting until the new Sandy Bridge Mac minis come out later this year.

If you're asking would it be worth cracking this thing open and attempt to put a new processor in it, I'd say no. The effort alone would make me not want to do it - opening this thing is not easy and I can't imagine dropping a new CPU in is a simple process by any means.

Always wait on Apple products. The latest generations make the previous ones obsolete.
