Will the Sprint iPhone 4s have call multitasking?

The only big feature with AT&T is the ability to have a call and do other tasks on the iPhone at the same time; will Sprint iPhones be able to do this?

No. This is a limitation of the way the radios work. On the Sprint phone, everything goes over the CDMA radio. On the AT&T version, it uses GSM for calls and WCDMA for 3G data. The only way to do calls and data simultaneously on Verizon or Sprint is with a true 4G phone, i.e. a device with an LTE or WiMax radio, respectively.

But what about the dual antennas? Why can't it use one for calls and one for data at the same time?
