Why do so many wireless mice require that USB dongle?

It seems to me that Bluetooth is ubiquitous by now. Isn't it? And isn't it intended for these kinds of devices? I've used Bluetooth mice from Microsoft and Apple and never had a real issue. So why aren't all wireless mice using it?

Is there some kind of lag involved that bothers people? Interference?

In my opinion it comes down to ease of use. Bluetooth does work, but it can take a bit more technical knowledge to get it to work sometimes or to troubleshoot it if something goes wrong. USB dongles on the other hand are plug and play easy for everyone on any device. Now that they are so small we can leave them in all the time and they don't get in the way. Also, although it is on a lot, Bluetooth is not on as many devices as USB is. From a manufacturer stand point you want to hit the most people for your buck; USB does that.

Another point is that I can very quick pull that USB dongle out of my laptop and put it in my Chromebook or any other device. Going back and forth like that on two psychically close devices with one Bluetooth mouse would be messy.

While dbin makes some good points, I think those are unfortunate answers.

However as a Apple user, I'd have to disagree with the ease of use- I have a trackpad at work, and a magic mouse at home. Both work flawlessly even if they become disconnected.
That being said, I think this is just another great example that Apple "gets it" where others miss the boat. I value the available USB ports, and this will only be more important as more "air" like devices come out, and those ports are precious.
But finally, I'm all for ditching ports all together, so companies need to figure out how to speed up wireless data and I/O. I think USB is holding the industry back. Dongles be damned.

So the user doesn't have to get the bluetooth connection setup, and it helps with all the PCs that don't have bluetooth.
