That's a pretty subjective question, but I'm personally quite fond of MIUI and its derivatives.

Indeed it is a subjective question. I'm a big fan of the Cyanogen mod although I've got an android 2.3.5 with HTC Sense 3 version on right now and I like it quite a lot.

I'll say that Android Revolution HD is the best ROM. Especially if you want to keep Sense.
