A local electronics shop is offering the Viewsonic tablet for $350, which is certainly a good enough price to make it worth looking at, however, I certainly have no qualms about rooting a Nook and installing Cyanogen on there. My primary use will be reading PDF files, and many of those PDF files are going to consist of scanned images as opposed to text. 3G isn't important, as I can use my phone as a hotspot.
So which should it be?

When I got mine originally (woot'd mid-March), the intent was to use it instead of the Nookcolor. But, eventually I found that Nook for Android didn't do magazines.
Though I did hear they have updated the app to do magazines on Android tablets, but I haven't gotten around to subscribing to a magazine to see how it works. But, at least the category shows up now when I shop from my gTablet.
FWIW, I'm running VeganTab Gingerbread edition, hopefully there'll be an update so that I can do NetFlix later :)

I'd go for the NOOKcolor because it's cheaper and from what I've read, it has a pretty nice screen. If you're going to be doing a lot of reading, you should opt for the device with the better screen.

I picked up my Viewsonic gTablet for $279 from Woot! They had it on sale last week, but I bought mine on Amazon via Woot. It will probably become available again within the next month at that price.

I can't speak for the Viewsonic but I have a rooted Nook and its great. Screen is sharp and bright. Cyanogen is solid. If you want to save a little money then go for the Nook. Good luck either way.

Don't forget we're talking about a 10" tablet versus a 7" one. Really comes down to preference (mine is for the larger screen on the gTablet!). Also, the gTablet is eminently hack-able, if you're into that sort of thing. The Nook Color is intended as an e-reader only and must be rooted before you run any custom roms.

Don't pay $350 for the gtab. It's cheaper than that at Amazon right now and they have it under $300 from time to time. Unfortunately, I don't have any experience with the Nook Color so I can’t tell you which one to get. I do like my gtab though.

Both devices have the same wonderful screen (LED backlit 1024 x 600 px), the Viewsonic is a 1GHZ proc. vs the 800Mhz inside the NC.
My rooted NC (running CM7, Gingerbread), is overclocked at 950Mhz, and I do feel it a bit sluggish at times. I bought it because i wanted a 7" tablet, and didn't want to spend more cash than i needed to. But as I do feel it quite sluggish at times, I researched the Samsung Galaxy Tab 7" WiFi devices performance, and i found out that it was just about the same.
So, my vote goes to the NC. Plus its really a gorgeous device (much more than the ViewSonic, or Galaxy, in my opinion).
