I have Mac Mini hooked into my home theater system. When I hit an activity that involves the Mac, like watching Movies or listening to Music, it automatically starts playing whatever might be selected on the Mac.
This is really annoying, especially if I have a rented movie in iTunes selected, which then starts the 24-hours to watch clock.
Any ideas on how to disable this?

LOL, my MacBook does the same thing. While starting iTunes playback isn't an annoyance for me, but I think below is what I would want to try.
One option might be to change the power settings, and tell the Mac to never power off.
Another option might be an activity that adds the Mac as a custom device instead of the standard wizard add:
Delete your "Watch mac Activity"
Create a new custom Activity
When propted for your video source, do not pick MacBook, pick TV instead.
Set inputs for video and audio according to your Mac.
Last option where you customize your activity, then add in your mac, and pick a non-intrusive command like volume up or something. Then go into customize buttons and make further changes to add in your mac, like direction arrows play/stop/pause, etc.
