Loved this phone at first, but almost 30 days later, I'm having severe interface lag.

For example, when I'm typing anywhere, it types fine at first but on any random keypress it will freeze graphically. The system thinks I'm holding the button down for the duration of the freeze. If, say, the button frozen on is the back button, the phone will provide haptic feedback and delete words. The results would not show up until the freeze stops several seconds later. This happens other places too, such as the unlock screen, the back button, and the home button.

yeah, interface lag is a well-documented issue with all of Samsung's Galaxy S based phones due to the way they configured the onboard memory. all i can recommend is to avoid any phones based on the Galaxy S aside from the Nexus S. returning it is your best bet as hoping for a fix will only leave you beyond your return window with no word from Samsung... they're quite well known for abandoning their phones.

touchwiz seems to be a pain, i hated it at first, then liked it, now kinda hating it again!

Have you upgraded Android since you bought it? I had some serious lag problems after an upgrade but reset to factory settings fixed it. If not it might be just the regular behaviour of the phone, it is a bit twitchy compared to other android phones.
