iTunes keeps relaunching itself automatically after quitting.
Like an endless loop iTunes keeps relaunching itself after quitting the program.
If you're using a Mac, check that the iTunes widget in Dashboard is NOT running. It will keep opening iTunes if it is. If you're using Windows, I've no idea.

If you have your iPhone/iPod/iPad plugged in, the "automatically open iTunes when connected" setting might be on, this will cause iTunes to open itself

Check if your iPhone is set for Wireless Sync over WiFi. Had this problem, and it disappeared after disabled WiFi Sync, and "automatically open iTunes when connected" settings...
