Yes, so I'm getting rid of my original iPad and want to make sure all my personal data is securely erased. Is there a preferred method to go about it or do I simply have to go to Settings -> General -> Reset -> Erase all content / settings?
I remember hearing some murmurs of data not being securely erased from SSD / NAND flash, so it's kind of disconcerting. Any advice?

I think there is a way to do it via iTunes, but it's essentially the same as the method you mentioned.
According to the Apple knowledge base, with the iPad, it "erases user settings and information by removing the encryption key to the data". Hopefully that would be enough to prevent access to your data. If not, let's cross our fingers and hope your iPad falls into the hands of a nice person.

Yes you are safe if you go the reset route. You cannot be 100% sure any other way. I would actually delete all my account settings like email etc and the do a reset. Hope this helps. Good luck
