I want to know, why do my pictures from my perfectly capable camera look so pixel-y when set as a background on my iPad? Is there a way to make this better?

How are you pulling them into the iPad? Are you adding images to the iPad via iTunes and then setting as wallpaper on the iPad? I think iTunes has an option to save "low resolution" images on iPads, iPhones, and iPods to save space. This could be the issue.

Try to resync your entire photo library with your iPad. That fixed mine when I stopped the first sync too soon.
