I'm an entertainment junkie so mine is very video heavy:

1) Netflix
2) HBO GO (if you have HBO)
3) Crunchyroll (anime)
4) Xfinity TV (if you have Comcast)
5) PlayOn (streams regular Hulu and a TON of other video sites to the iPad)

For other stuff I use a lot:

1) Dropbox
2) Splashtop
3) Keynote
4) Skyfire
5) Kobo eReader

More fun type stuff:

3) Untappd (for when I drink beer)

In no particular order:

- The Daily (had some growing pains when launched but much better now)
- Netflix
- Bing
- Monopoly HD
- Plants vs Zombies HD

I've heard good things about Flipboard as others mentioned but I think I need to start using Twitter first to really take advantage of it. I like Pulse too but from what I have read that it is not any better on iPad than Honeycomb.
