I'd like to use an old iPhone as a Wi-Fi only iPod, but I don't want to leave it in airplane mode all the time. Is there a setting I can change to make it never activate, or forget its phone information (like phone number, IMEI, etc)?

You can just pull the sim out. Then there is no way for it to use the cellular network. Had to do this for a couple months and it worked fine. Didn't try syncing or updating with iTunes though, not sure how it will react.
