How do I resize my partition after I've created it with boot camp?
I've split my hard drive 50/50 for Windows 7 and 10.7 using boot camp assistant, it seems the only way I'd be able to change this would be to wipe the Windows partition and resize it. So, how do I non-destructively resize the partitions?

I've never actually tried this, so it may or may not work in practice.
Windows gives you the ability to shrink a partition, given that you aren't using the whole partition. Right click on "My Computer," choose "Manage," and then go to the DIsk Management section. Right click on your main partition and choose "shrink volume." Windows should check the volume and tell you how small you can shrink it to. Shrink it to whatever size is allowed that you're comfortable with.
After you've shrunk the partition in Windows, you should be able to non-destructively shrink the partition in Mac OS using the Disk Utility.
Again, I've never tried this in real life, but it seems like it should work. As always, back up anything super important before you try it. Worst case scenario is you screw up your Windows install and have to redo it.
