I'm looking at replacing the Hard Disk on my m1210 with a SSD. Does anyone have any recommendations ?
I assume that any SATA II SSD should work fine with my m1210. Right ?

Yes - I talked to someone recently who I gave my M1210 to years ago that he'd stuck an SSD inside it and that made it a lot better.
However, if I'm correct it was a Merom machine and as such, I think the onboard SATA interface only delivers SATA speeds. You should still get very respectable speeds though.
