I'm personally a really big fan of LeeDroid. I tried CM7 for a while, but I felt it lacked the stability that Sense UI adds. It was miles faster though, if that's what you're looking for. And switching to the stock UI instead of Sense takes a while to get used to, but both worlds are pretty freaking awesome once you get used to them.
