Question about
Has anyone tried using foreign sims while traveling to Europe, China or elsewhere?
Does using another carrier's sim require any sort of unlocking or modification?
I've used my iPhone 3GS in London, England with a Libara sim card. Libara was the best and least expensive. I've also used my iPhone 3GS in South Africa with no problems. The only caveat is that you have to have your phone unlocked, but that's about it.
I was able to unlock my iPhone 3GS a while back and have left it in that state (no updates) so that I can use it for travel.
If you have an phone with Android OS, I believe that you should be able to unlock it easily. I don't have an Android phone yet, so I can't say for sure.
Checking your phones radio frequency would help as well, to see if it's compatible to the network that you would be using in the foreign country as some phones use different frequencies. Most phones have a wide variety of frequencies and will work, but you want to be sure before you travel.
