Does AirPlay mirroring work for sound as well as video?

The example I'm interested is radio apps which do no themselves support AirPlay. If I start a radio app streaming on my iPhone or iPad with mirroring turned on to the apple tv, will the sound stream be mirrored?

Yes, mirroring does support sound and will stream the sound along with the picture.
