Recommend Jailbroken Apps for the iPhone
What are some of your favorite jailbroken apps for the iPhone platform? But really, is there even a reason to jailbreak your iPhone? I did like the app to run applications in the background
Backgrounder's great. My personal favourites are: -
Icy - Lightweight alternative to Cydia (for installing 3rd party apps)
Quake III - Not 100% playable but great "porting" effort
HapticPro - Doesn't work too well with 3.0 JB but great vibration feedback for key and/or button taps.

Reflective Dock is pretty nice.
NoRotation - Disables rotation in music and safari and is customizable thought a '.plist'. I had it set so that coverflow was turned off (God, I hate that feature!) and that safari rotated only once so that I could get it from portrait to landscape and then it stayed put. Unfortunately though its not currently working with OS 3.0! I miss it so much...
Backgrounder - Running apps in the background, radio is the main one I use in the background.
Cycorder - Decent video recording for the 3G.
Flashlight - Unlike App Store applications, this ups the brightness to max automatically and then changes it back once you close it. Surprisingly useful actually.
Terminal - For the inner nerd. Though, I can never find a use for it...
Insomnia - Keeps wifi on when locked so you can download big stuff without a worry.
SbSettings - THE most useful app I have. Swipe the top bar and get quick access to turning on/off wifi/3G/Insomnia/SSH/Bluetooth/etc and change the brightness and see what processes are currently running. You can close them too if everything is running a bit laggy or you accidentally made one run in the background. Also, quick re-springing, a mini dock, power options and ability to hide icons I don't use like stocks. It also tells me my WiFi ip address and how much memory i'm using.
Its like the task manager of the iPhone.
MxTube - Download YouTube videos to your iPhone.
Installous - Less than legal app store downloading...

With the 3.0 update they fixed the reading-safari-in-bed problem by not allowing it to rotate completely upside down. This way when it goes landscape and I lie on my side it stays landscape. Works both ways too.
If only there was a switch to turn off coverflow! Hell I even sent apple a suggestion asking them to add a switch for it. Though, I think somethings up; they added the 'Shake to Shuffle' feature and that came with the ability to be turned off from the start so either coverflow is forcefully left on or the apple dev's are really, really, REALLY dim for missing such an obvious function.

I use all the above and more. Jailbreaking turns the iPhone into the powerful personalised custom device it should be out of the box.
Speaking of customisation, don't forget the Winterboard app. There are some amazing GUI/Themes out there that give the iPhone a far slicker (and personalised) appearance, rather than it's boring generic interface. Same goes with 5 icon dock, springjumps, 5 column springboard which all allow you to fit more icons onto your dock and springboard pages, freeing up space and allowing faster access to apps.
Not to mention you can add important functionality to the lockscreen using apps such as Intelliscreen, which has it's own awesome SMS/Email/Calendar/RSS/Weather clients which display updates in realtime right on your lockscreen (where they should be in the first place rather than buried in closed applications!).
As others have said SBSettings and Backgrounder are must haves, but I'm really missing the great features Backgrounder used to have under 2.X. The previous release had a cool little task manager which allowed you to multitask/switch between apps/close apps from a pop up menu. This functionality has been lost with the new 3.0 version (which only allows basic background enabling) but hopefully it will be updated soon.
Lastly OpenSSH combined with iPhone browser allows plug n play file managing with your PC. Just drag and drop files into any directory.

My favorite app by far is either iPhoneVideoRecorder or Cycorder. These apps are the main reason I have been able to resist upgrading to the 3G[s].
I prefer iPhoneVideoRecorder over Cycorder, even though it costs $$$, because of the ability to upload directly to YouTube, much like the native video recorder on the 3G[s]. Fortunately I purchased a license back when it first became available and the same code works for all upgrades.

Cycorder, SBSettings, Winterboard, some emulators, Five Icon Dock (even though I'm not entirely confident in its safety), Poof!, and my favorite, LockInfo.
If I could take a minute to plug LockInfo as a huge fan, it allows you to view your calendar events, new texts/emails/voicemails (not listen, just see when it was left and from who) and check the weather right from your lockscreen. The lockscreen, for those who may not know, is the screen you see when you turn your phone screen on – with the "slide to unlock" and time/date.
I've had a lot of fun seeing how fantastic LockInfo can look – my favorite has to be this: macthemes2.net/forum/viewtopic.php?id=16794932. It's a gorgeous customization, most people are insanely jealous when they see my phone with that running.

I'm still waiting for PocketTouch to get updated for 3.0... most useful app for listening to music in the car, with the phone in the mount, easy to advance songs, pause, change volume easily (I like to leave the car radio pretty set, so if I switch over to the radio, it doesn't blow me out of my seat).
Is there an app that allows you to stream Live TV onto the iPhone?

Mxtube - Lets you download youtube videos
qTwitter - When you run your finger from the status bar at the top down to the middle of the screen it pulls down an inline twitter/facebook update window.
Backgrounder - Still not fully working on 3.0 but it lets you run apps in the background. Very useful.

Really surprised this thread doesn't have more activity. So far, I'm digging Winterboard (with a nice Snow Leopard theme my buddy Paloooz made) and Qik. I was using PdaNet back in the day, but now just use the default tethering option after updating carrier files for AT&T. After reading this thread, I'll have to check out Installous and NoRotate. Maybe even Icy, as Cydia is crashy as hell. Tried to get NES emulator going on my 3GS, crashes upon opening though. Maybe a small hint to pony up for the $5.99 version?
Wow i never knew about Insomnia, going to give that a go now! hate it when Wi-Fi cuts out on auto-lock.

Allows you to reply to an SMS without having to go all the way into your Message app (which i don't know about you guys but can get terribly slow, especially on a 1st-gen 3G)
Speaking of Winterboard, you can grab a lot of themes off the Cydia app itself and do a quicker preview on net by going to modmyi.com loooads of themes n new theme releases there! I personally like Buuf2 and Orb themes.

I only just got round to jailbreaking my 3G in the last few days and already found a few "must haves."
I echo the other comments in saying SB settings and Backgrounder are indispensable; also:
Spot for Spotify access (although you need a premium account, and it currently offers no caching like the - hopefully - app store bound official app).
Grip for Growl-like notifications - really helpful for apps like Beejive, as the notifications are nowhere near as intrusive as the native blue bubbles. Team up with Prowl on a Mac and all your Growl notifications from apps like transmission can be seamlessly pushed to your iPhone!
ScummVM for some nostalgic point and clickers - notably "Monkey Island 2," "Sam and Max Hit the Road" and "Day of the Tentacle."
I also gave installous a try and, while it works as advertised, I ultimately deleted it as my conscience got the better of me.

I just wanted to thank everyone for their input, I've discovered some GREAT apps and settings that would have taken me months to catch on to, GruppledLock is great and TeaTime-Lapse (I replaced the default photos with my own), Insomnia, VoiP3G, etc. Thanks again guys.
I couldn't live w/o SBSettings with a couple toggles made by independent devs.

biggest advantage is being able to install cracked ipa's, so you don't have to BUY everything
yes, this is piracy... and I downloaded a LOT of ipa's... and now my iPod is unjailbroken, i'ce BOUGHT a lot of them because they were worth the money
second biggest advantage to me was backgrounder... but then again... I don't really need background apps
