iOS feels old, need new phone.
Ive had every iPhone that has been released, but I'm finding myself bored with the design of the OS. I'm curious about other smartphones available on AT&T. I really do like what windows phone offers but it's missing some important apps for me. Android seems nice but I'm turned off by how it has a similar feel to iOS. I'm interested in hear some views from people with android and windows phone.
I'm currently a Mac user, own a Xbox and apple tv; if that helps at all.

Android ICS actually looks very swish and like the most modern OS out right now! you should check out the Galaxy Nexus.
The nokia windows phones also look decent, but I don't really know about the UX since I've never used one of those. There's been some demoes of Windows phone being used with kinect for xbox, but not sure any of the current ones can do that.

The galaxy is the iPad knock off and cheaper but is it better? It has interesting problems when you want to use the cam with yahoo and Skype. It does not work. It allows you to see someone calling you on the galaxy but the sending cam does not mesh up with these apps. Face time, Skype, yahoo and cam frog all work with the iPad but if u want to spend less money you have to take your chances with the galaxy.
What apps are you looking for and can't find on wp7?
You can probably get a Samsung focus for cheap and give it a month or two to try. Wp7 is one of those things that you have to try for a week or two to start forming an opinion on.

I'm totally with you. I had both the Verizon and the AT&T iPhone 4 and got rid of both of them for basically the same reason you're considering changing -- it was getting boring. So, I currently have (on AT&T) the Samsung Galaxy S II Skyrocket, which I love. If you're looking for Android on AT&T, it doesn't get any better. I also ordered an HTC Titan over the weekend since it was on sale for one cent. I had a Samsung Focus before, so I've tried Windows Phone before, but I ended up getting bored with it waiting for Mango to be released. I'm excited about getting to have a phone with Xbox Live and Zune integration once again -- I missed both of those things.
