Cannot initiate calls with Bluetooth on HTC Droid Eris

My wife and I just got new phones and we can't get the bluetooth to initiate a call. Verizon store says this is not available on these phones. Verizon phone support says it is a compatability issue with my bluetooth device which is a fairly new plantronics discovery 925. It makes absolutely no sense to me that the phone programing would omit this ability and the previous phone (razor) worked fine. Any suggestions? I really need this feature and if it doesn't become possible, I may have to return these, pay the restocking fee, and get another pair of phones. Thanks in advance.

For future reference, in order to put a blue tooth headset back into pairing mode (required to pair a blue tooth to a different phone), press and hold the power button from the off position and it should flash blue and red. There is no compatibility issue.
