I'm gonna start making a list for blu-rays I watch where I list the average video/audio bitrate for those interested. This is not scientific or measured - it is purely observational. When I watch these movies, I will generally check (by hitting "Display" on the PS3 blu-ray remote or my Harmony remote) every 10 to 20 minutes.
Avatar - average video bitrate of 31 Mbps [AVC]- fixed audio bitrate of 7.5 Mbps [DTS-HD 5.1]
Cloudy with a Chance of Meatballs - average video bitrate of 25 Mbps [AVC], average audio bitrate of 4 Mbps [DTS-HD 5.1]
(all reported audio bitrates will be for the HD audio codec only - DTS-HD, Dolby TrueHD, and PCM depending on the film)

(the highest sustained video bitrate I have seen yet - only dipped occasionally during moments where the screen was dominated by black. And it shows - while there is no one amazing looking scene, the overall look is perfect and lends to the authenticity of the time its portraying)

Invictus - average video bitrate of 22 Mbps [VC-1] - average audio bitrate of 3.4 Mbps [DTS-HD 5.1]
(during loud/action scenes the audio bitrate would spike up over 4 Mbps and the the video would go to above 30 Mbps - even hitting 40 Mbps a few times. I thought something was wrong with the video at first because it was very glowy and shiny - even appearing a little washed out at times. I have since found that it was the intent of the director for it to look this way and recreates the theatrical presentation perfectly. via bluray.highdefdigest.com/3166/invictus.html)
